Pumpkin seed butter is my favorite for several reasons. Pumpkin seeds and pumpkin seed butter are both excellent sources of zinc! Since I have two small children at home, it’s important to me that my immune nutrients are up-to-date. Zinc is one of them.
Pumpkin seed butter contains 5g of protein in each TBSP. Amazing!! You can use any other nut butter or seed butter to make this recipe.

Ingredients:
- 1 cup pumpkin seeds butter (or any other nut butter or seed butter).
- 15 Medjool dates, pitted
- Genuine Health collagen unflavored, or any other brand
- Coconut flour 2 TBSP
- 1 tsp vanilla extract
- Taste of sea salt
Optional Additions
- raw cacao powder
- Cinnamon
Directions:
- Add all ingredients to a food processor.
- Pulse the ingredients until a dough-like consistency is achieved.
- Roll into balls between 1.5 and 2 inches in diameter.
- Roll them in raw cacao powder or cinnamon to serve. They are also great plain. I prefer them with cinnamon.
