This week I spent a week in Vancouver Island teaching lunch & learneds in some remote areas. Before I left I made some energy bites as a mid-afternoon snack. They turned out great even though I didn’t follow a recipe.

Ingredients:
- 1 cup almonds
- Coconut oil 2 TBSP
- I used peanut butter.
- Raw cacao powder is 1/4 cup (cocoa powder also works)
- 4 Medjool dates, pitted
- 1/4 cup coconut flakes
Directions:
- Place the almonds into a food processor, and grind them until they are a fine flour-like consistency.
- Blend the remaining ingredients until they form a dough-like consistency.
- Roll into balls and freeze
