Penguin Random House Canada sent me a copy Amelia Freer’s newest book The 10-Day plan to Nourish & Glow, Lose weight, Feel Great, and Transform Your Relationship with Food. Amelia Freer is a name I had never heard before. She has a large following and with good reason. Her recipes are delicious and simple. This book has a 10 day plan that is very detailed with all the recipes. It’s a book I would highly recommend!

Ingredients:
- 7 oz Sugar Snap Peas, blanched and steamed.
- Broccoli, 7 oz (about 1 small head), blanched and steamed.
- Peel and spiralize 1 small carrot
- Spiralize or grate 1 small yellow or green zucchini.
- Wash and halves 6-8 cherry tomatos
- Half a yellow pepper or an orange pepper, seeds removed and thinly sliced
- Wash or dry a handful of leaves.
- Amelia’s recipe is on page 136 of her book, but you can also use store-bought hummus) You can substitute store-bought or homemade hummus for the recipe on page 136.

- A drizzle of extra virgin oil
Directions:
- After a few moments, steam or blanch the broccoli and sugar snap peas for a couple of minutes. Then refresh them with cold water. After cooling, place half of them, covered, in the refrigerator. You will use these again on Day 3.
- The remaining broccoli and sugar snap peas can be dried and arranged with the other vegetables in a container or bowl. You can prepare all of this ahead of time, and then store it in the refrigerator overnight.
- Enjoy your salad by topping it with hummus and adding a sprinkle of seeds and extra virgin olive oil.
