Ingredients:
- Can of black beans (19 oz), rinsed and drained
- 1 cup cooked corn (from a can or a cob).
- Cherry tomatoes diced into 1 cup
- 1 diced bell Pepper
- Red onion, 1/2 cup diced
- 1 lg. avocado, cubed
- Red wine vinegar 2 TBSP
- Juice 1 lime
- 1/4 cup chopped cilantro
- Cumin powder, 1/2 TSP
- 1/4 TSP cayenne
- 1/4 cup olive oil

Directions:
- In a medium-sized bowl, combine the black beans with corn, cherry tomato, bell pepper, red onion and cilantro.
- Combine the lime juice, red wine vinegar and cayenne in a mason jar or bowl. Stir or shake to combine.
- Pour the dressing on top of the vegetables, and mix everything together. Dress this 30 minutes prior to serving, to allow dressing to soak into the ingredients. Or dress it immediately before serving.
