Low Sugar Energy Bites

This week I spent a week in Vancouver Island teaching lunch & learneds in some remote areas. Before I left I made some energy bites as a mid-afternoon snack. They turned out great even though I didn’t follow a recipe.

Ingredients:

  • 1 cup almonds
  • Coconut oil 2 TBSP
  • I used peanut butter.
  • Raw cacao powder is 1/4 cup (cocoa powder also works)
  • 4 Medjool dates, pitted
  • 1/4 cup coconut flakes

Directions:

  1. Place the almonds into a food processor, and grind them until they are a fine flour-like consistency.
  2. Blend the remaining ingredients until they form a dough-like consistency.
  3. Roll into balls and freeze
