You can add this delicious and easy Mason Jar Salad to your meal preparation.
You don’t need to serve it in mason-jars – just use a Tupperware. But mason jars look more attractive, right? 😉

Ingredients:
- Three servings of the protein of your choice (I chose chicken breast).
- 1 cup of hummus
- 2 cups cherry tomatoes
- 2 bell peppers, diced
- 1 Red onion diced
- 1 cup artichokes
- 2 TBSP avocado or olive oil
- sea salt & pepper
- 3 handfuls spinach
Directions:
- Pre-heat the oven to 400F
- Chop bell peppers, red onions and red onion
- Place the tomatoes, artichokes, and vegetables on a baking tray and sprinkle with salt and pepper, oil and olive oil.
- Roast for 30 Minutes
- Add 1/3 cup of hummus in each mason jar.
- Add the cooked vegetables to the mason jar, on top of hummus.
- Add a handful spinach to each jar.
- Then, add the protein of choice.
If the vegetables are not oily enough, you can add a little oil to your salad. Add 1 TBSP of olive oil on top of each jar if they’re not.
