Roasted Veggie Mason Jar Salad

Roasted Veggie Mason Jar Salad

You can add this delicious and easy Mason Jar Salad to your meal preparation.

You don’t need to serve it in mason-jars – just use a Tupperware. But mason jars look more attractive, right? 😉

Ingredients:

  • Three servings of the protein of your choice (I chose chicken breast).
  • 1 cup of hummus
  • 2 cups cherry tomatoes
  • 2 bell peppers, diced
  • 1 Red onion diced
  • 1 cup artichokes
  • 2 TBSP avocado or olive oil
  • sea salt & pepper
  • 3 handfuls spinach

Directions:

  1. Pre-heat the oven to 400F
  2. Chop bell peppers, red onions and red onion
  3. Place the tomatoes, artichokes, and vegetables on a baking tray and sprinkle with salt and pepper, oil and olive oil.
  4. Roast for 30 Minutes
  5. Add 1/3 cup of hummus in each mason jar.
  6. Add the cooked vegetables to the mason jar, on top of hummus.
  7. Add a handful spinach to each jar.
  8. Then, add the protein of choice.

If the vegetables are not oily enough, you can add a little oil to your salad. Add 1 TBSP of olive oil on top of each jar if they’re not.
