Ingredients:
Salad:
- Take 1 head of kale and stemm it. Then chop it finely.
- Peel and dice 1 yam into 1 inch cubes
- Half a cup of walnuts
- Half a cup of goat or sheep cheese
- 1 cup BC blueberries
Dressing:
- 1 tsp avocado oil
- Peel and finely dice 1 large shallot
- 4 TBSP olive oil
- Water 4 TBSP
- Honey or maple syrup 3 tablespoons
- 1 TBSP apple cider vinegar
- Juice of 1/2 lemon
- Half a teaspoon of salt
Directions:
- Pre-heat the oven to 400F
- Peel the yams and dice them into cubes of 1 inch.
- Place the baking sheet on parchment paper and bake for 25-30 mins or until done.
- Heat a small pan on low-medium heat with 1 teaspoon avocado oil
- The shallot should be minced and fried until translucent.
- Blend the shallots and other ingredients together in a food processor until creamy.
- Cut the kale into bite-sized pieces.
- Massage the dressing into the kale leaves with your hands (this is the best way).
- Top with blueberries, walnuts, and yams.
